Air Fried Avocado Tacos

These Air Fried Avocado Tacos are a favorite in my house! All of the Tex Mex flavors you know and love, with a veganized twist! The pico and roasted poblano sauce can be prepped ahead of time if you'd like, making the rest of the assembly relatively quick.
*Note that From Start to Finish is an estimate that includes 1 hour to make your Roasted Poblano Sauce and Pico de Gallo (assuming that you make your pico WHILE the poblano peppers roast, so that you can make them both in a one-hour period). Once both of these are prepped, the rest of the tacos should only take around 30 minutes or less!

Ingredients

Air Fried Avocados:

  • ¼ cup panko breadcrumbs*
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic salt
  • ¾ teaspoon onion powder
  • ¼ teaspoon cumin
  • sprinkle black pepper
  • 1 large avocado - sliced into 8-10 slices
  • ¼ cup unsweetened plant milk (I use almond milk)

Instructions

  • Preheat your air fryer to 350F.
  • Prepare your breadcrumb mixture and plant milk: In one small/medium bowl, pour your unsweetened plant milk. In a separate small/medium bowl, mix together your breadcrumbs, smoked paprika,. garlic salt, onion powder cumin, and black pepper. You should now have one bowl of plant milk and another bowl of your breadcrumb mixture.
  • Prepare your avocado: take one avocado slice at a time and quickly dip it into your plant milk to get it wet. Coat it with your breadcrumb mixture, and then place in the air fryer. Do this until you have one layer of avocado in the air fryer (depending on your air fryer, this may take 2 rounds).
  • Air fry your avocado: air fry your avocado at 350 for 4 minutes. After 4 minutes, carefully use kitchen tongs to flip the avocado slices. Air fry for another 3-4 minutes, or until breadcrumbs are slightly golden. This can sometimes differ a bit depending on your air fryer - so be sure to keep an eye on them!
  • If cooking your avocado in two batches, remove the first batch and repeat steps 3-4 with the second batch.
  • Assemble your tacos: spread ¼ of the refried beans on each tortilla. Top with 2-3 slices of the air fried avocado, ¼ of the lettuce, ¼ of the pico, a drizzle of the poblano sauce, and an optional sprinkle of vegan shredded cheese.
  • Enjoy!

Notes

*Panko breadcrumbs: plain panko breadcrumbs are vegan at the time that I am writing this, but go ahead and check the ingredients when you buy them just in case! Sometimes companies change recipes, so it's always good to be safe!
*Vegetarian refried beans: Not all refried beans are veg-friendly (they often use lard), but the ones that do not use lard are often specifically labeled as "vegetarian" in the stores and tend to typically be vegan as well - so look for that vegetarian label and check the ingredients list to be sure!
