This Easy Vegan Mayo is the perfect compliment to any sandwich or veggie burger, and only takes 5 minutes of hands-on time! It is even oil free. Make this over the weekend and use it as a flavorful and quick condiment throughout the week!*Note that From Start to Finish is an estimate that includes 30 minutes to soak your cashews, 5 minutes to complete the steps of the recipe, and 30 minutes for your mayo to set in the fridge. (Depending on the temperature of your fridge, this time may be more). That means that only 5 minutes of this is hands-on!
Toss all ingredients in a high powered blender and blend until very smooth. It may seem a little thin right now, but it'll thicken a bit as it sets in the fridge.
Transfer to a jar or container of your choice and refrigerate for 30-60 minutes, or until it has slightly thickened and become more of a mayo consistency.
