Easy Vegan Tzatziki Sauce

This Easy Vegan Tzatziki Sauce is perfect for any Mediterranean-loving plant based kitchen! Use this as a condiment on your next wrap or sandwich, add a dollop to your buddha bowl, or just enjoy it as a dip with pita bread and veggies!
*Note that From Start to Finish is an estimate that includes 10 minutes to prep your ingredients and make your tzatziki, but does not include the 30 minutes of refrigeration time at the end of the recipe.

Ingredients

  • ¾ cup plain coconut yogurt
  • ½ small/medium cucumber - grated
  • 4 cloves garlic - minced
  • 2 tablespoon dill - finely chopped
  • ½ teaspoon onion powder
  • 1 tablespoon lemon juice
  • optional: ½ teaspoon lemon zest
  • salt - to taste

Instructions

  • Place your grated cucumber onto a thin dish towel. Over the sink, squeeze the cucumber through the towel to wring out as much liquid as you can. When you are done you should have about ⅓ cup of grated cucumber (don't stress too much about getting exactly ⅓ cup though, you'll just have a slightly stronger or weaker cucumber flavor if you end up with more or less!)
  • Add your cucumber and all other ingredients to a bowl and mix to combine. Give it a taste test and add more salt if desired.
  • Ideally, let it refrigerate for at least 30 minutes before serving (this gives it a stronger flavor, and also allows it to thicken!). Serve with pita bread, fresh veggies, or use as a condiment on a wrap or bowl! Enjoy!
