These are truly The Best Vegan Loaded Nachos! They are piled high with a Quick Vegan Queso, Lentil Taco Meat, fresh veggies, and all of the guacamole & salsa you want! Your vegan Tex Mex dreams are about to come true.
*Note that From Start to Finish is an estimate that includes an hour to prep your ingredients (including making your Quick Vegan Queso and Lentil Taco Meat), and 20 minutes to make and assemble the nachos.

Ingredients

Optional Additional Toppings

  • ¼ cup black olives - sliced
  • ¼ cup sliced pickled banana peppers
  • squeeze of lime juice
  • ¼ cup plain coconut yogurt - (OR vegan sour cream)
  • ½ cup salsa
  • ½ cup guacamole

Instructions

  • Preheat oven to 375F.
  • Line a baking tray with a silicone baking sheet or aluminum foil. Spread the tortilla chips evenly on the tray and bake for 5-10 minutes, until warm and slightly crisped.
  • Assemble the nachos: divide all the ingredients between 4 plates. On each plate, layer tortilla chips, Quick Vegan Queso, Lentil Taco Meat, fresh veggies, and any other additional toppings you are using.
    (Note: If your queso is too thick, stir in a few tablespoons of water to thin it out for easier pouring.)
    Dig in and enjoy!

Notes

*Prep Tip: To make the most of your time, start by cooking the lentils (for the lentil meat) and soaking the cashews (for the queso) while you chop your veggies. Finish making the Lentil Taco Meat, then keep the lentils on low heat to stay warm. Then follow the steps of this recipe and while the chips are baking, finish up the queso. With this method, everything is hot and ready to serve at the same time!
