Vegan BLT With Avocado & Tempeh Bacon

This Vegan BLT features smoky tempeh bacon, ripe avocado, crisp lettuce, juicy tomato, and creamy vegan mayo. A hearty, satisfying lunch for every plant based sandwich lover!
*Note that From Start to Finish is an estimate that includes 1 hour 15 minutes to make the Easy Vegan Mayo and your Smoky Tempeh Bacon (mostly passive time for both of these), and 10 minutes to assemble your sandwich. To keep this recipe oil-free, be sure to use the Easy Vegan Mayo!

Ingredients

  • 2 slices sourdough - (or another bread of choice), lightly toasted
  • ½ avocado - sliced
  • 2-3 slices tomato
  • 2 leaves green lettuce
  • 4 slices Smoky Tempeh Bacon
  • 1 tablespoon Easy Vegan Mayo - (or another vegan mayo of choice)
  • sprinkle garlic salt

Instructions

  • Spread avocado slices across one piece of bread. Use a fork to slightly mash the avocado against the toasted bread.
  • On top of the avocado; add tomato, lettuce, and Smoky Tempeh Bacon.
  • Spread vegan mayo on the other piece of bread, then sprinkle with a bit of garlic salt.
  • Sandwich the two pieces of bread together, and cut in half if desired. Enjoy!
