Blueberry Coconut Smoothie

This smoothie is the perfect blend of sweetness and tanginess - making it the perfect refreshing drink for a hot summer day! Makes about 2 cups, which is about one serving in my book. Enjoy!

Ingredients

  • 1.5 cups frozen blueberries
  • 2 tablespoon plain coconut yogurt
  • 1 tablespoon pure maple syrup
  • ½ of a frozen banana
  • ¾ - 1 cup coconut milk* (preferably from a carton) - (The exact amount of coconut milk will depend on your desired consistency)

Instructions

  • Add frozen blueberries, coconut yogurt, maple syrup, frozen banana, and ¾ cup coconut milk to a blender. Blend until smooth, adding another ¼ cup coconut milk (or water) as you blend if necessary to reach desired consistency.
  • Pour and drink up!

Notes

*Coconut milk: I think the carton version is best for this recipe, but feel free to experiment with canned if you'd like a thicker and creamier smoothie.
