Blueberry Coconut Smoothie

Summer time calls for cold smoothies and delicious flavors... which is why this Blueberry Coconut Smoothie is perfect for this time of year!

This smoothie has sweetness from the blueberries and maple syrup, but also some tanginess from the coconut yogurt. It's refreshing and super easy to whip up in a hurry!

Without further ado, let's get into it!

Ingredients

  • Blueberries - for obvious reasons! These little blue guys really scream "summer" to me, and they give our smoothie a beautiful color!
  • Coconut yogurt - this ingredient provides both a creamy texture AND also packs in lots of flavor! The tanginess from the yogurt makes our smoothie interesting, and the coconut flavoring pairs well with our berries. I love to use the "Plain and Simple" Culina Coconut Yogurt for this because it's super tangy and doesn't have any added sugar, but you can use whatever brand you'd like! Just keep in mind that different brands may taste slightly different, which will alter the overall flavor of the smoothie.
  • Coconut milk - All smoothies need a liquid component so that they can blend into a drinkable consistency! Coconut milk is my choice for this one because it adds to the coconut flavor and makes our smoothie nice and smooth. You can typically find coconut milk in a carton OR in a can - I prefer the carton for this recipe, but either will work. The canned stuff is less diluted and will make your smoothie thicker, creamier, and more coconut-y. The carton version will also provide these aspects, but not as strongly. So pick whichever sounds most like you!
  • Maple syrup - this just adds a tiny bit more sweetness to our concoction! If you'd rather leave it out and have it a little less sweet, you do you.
  • Frozen banana - I love adding frozen bananas to my smoothies because it makes them so much thicker and creamier! This flavor also pairs well with our blueberry and coconut, and it's a great way to add some extra nutrients to your drink!

How to Make Blueberry Coconut Smoothie

This section almost doesn't even seem necessary since it's so easy!

  1. Blend ingredients
  2. Drink up!

Tips and Tricks

  • Be sure to use your favorite brands of coconut yogurt and coconut milk for this one! Different brands may provide slightly different flavors and consistencies, so you should use what makes you happy!
  • I mentioned this one above but want to reiterate it - I personally recommend coconut milk from a carton for this recipe, but you can try canned if you want it even thicker and creamier! 
  • If you're feeling super crazy, try swapping out the blueberries for another berry of choice! I've made variations of this with other berries when I don't have blueberries on hand. Blueberries are always my favorite, but it works with others as well. 
  • If you like your smoothies on the thinner side, or if your blender is having a hard time blending for some reason, feel free to add a little bit more coconut milk (or even water) as you blend. This will thin out the consistency and make it more on the liquid side.

Ingredients

  • 1.5 cups frozen blueberries
  • 2 tablespoon plain coconut yogurt
  • 1 tablespoon pure maple syrup
  • ½ of a frozen banana
  • ¾ - 1 cup coconut milk* (preferably from a carton) - (The exact amount of coconut milk will depend on your desired consistency)

Instructions

  • Add frozen blueberries, coconut yogurt, maple syrup, frozen banana, and ¾ cup coconut milk to a blender. Blend until smooth, adding another ¼ cup coconut milk (or water) as you blend if necessary to reach desired consistency.
  • Pour and drink up!

Notes

*Coconut milk: I think the carton version is best for this recipe, but feel free to experiment with canned if you'd like a thicker and creamier smoothie.
