Easy Veggie Fajitas With Jackfruit

These Easy Veggie Fajitas With Jackfruit are the perfect Tex Mex inspired recipe for your plant based kitchen! These vegan fajitas pack in lots of nutritious veggies, tons of flavor, and can be dressed up any way you like.

Ingredients

  • 1 can of jackfruit (20 oz) - drained and rinsed
  • 4 cloves garlic
  • 2 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • 1 small/medium red onion - sliced into strips
  • ½ red bell pepper - sliced into strips
  • ½ yellow bell pepper - sliced into strips
  • 1 tablespoon lime juice
  • ½ teaspoon liquid smoke
  • 1.5 teaspoon pure maple syrup

To assemble:

  • 8 tortillas
  • Optional sauce: Joyful Balance Roasted Poblano Sauce
  • Optional toppings: halved cherry tomatoes, diced avocado, cilantro, vegan shredded cheese, vegan sour cream or plain coconut yogurt, salsa, guacamole...

Instructions

  • Prep your jackfruit pieces by lightly pulling them apart with your fingers so that they look a bit like shredded chicken. A few large chunks are fine, you will be able to break them apart more later if needed. Set aside.
  • Bring a nonstick pan or skillet to medium-high heat on the stovetop. Add in your "shredded" jackfruit and sauté until slightly darkened, usually about 8-10 minutes. Add splashes of water as needed to prevent sticking. As they heat you can also use a wooden spoon to break up the chunks more if needed.
  • Add in a splash or two of water, then add the garlic, chili powder, cumin, smoked paprika, dried oregano, and salt. Give everything a mix and cook for another 2 minutes. (Add a bit more water if needed to prevent sticking).
  • Add your onion and peppers, lime juice, liquid smoke, and maple syrup. Sauté another 3-5 minutes, or until the veggies are cooked to your liking.
  • Remove from heat, add a few spoonfuls of the jackfruit mixture to each tortilla, and add the toppings of your choice!
