Prep your jackfruit pieces by lightly pulling them apart with your fingers so that they look a bit like shredded chicken. A few large chunks are fine, you will be able to break them apart more later if needed. Set aside.
Bring a nonstick pan or skillet to medium-high heat on the stovetop. Add in your "shredded" jackfruit and sauté until slightly darkened, usually about 8-10 minutes. Add splashes of water as needed to prevent sticking. As they heat you can also use a wooden spoon to break up the chunks more if needed.
Add in a splash or two of water, then add the garlic, chili powder, cumin, smoked paprika, dried oregano, and salt. Give everything a mix and cook for another 2 minutes. (Add a bit more water if needed to prevent sticking).
Add your onion and peppers, lime juice, liquid smoke, and maple syrup. Sauté another 3-5 minutes, or until the veggies are cooked to your liking.
Remove from heat, add a few spoonfuls of the jackfruit mixture to each tortilla, and add the toppings of your choice!
