These vegan fajitas pack in lots of nutritious veggies, tons of flavor, and can be dressed up any way you like. In my book, all plant based kitchens need a go-to jackfruit recipe (or two) under their belt, and this is one of mine!

Inspiration for Easy Veggie Fajitas With Jackfruit
One of my FAVORITE past recipes are my Jackfruit Quesadillas, so I knew I needed to bring back another fun jackfruit recipe. Jackfruit is great for Tex Mex inspired recipes because it soaks up seasonings nicely, it has a similar texture to pulled pork or pulled chicken, and it's flavor pairs well with many Tex Mex ingredients!
Fajitas typically have strips of veggies, so I knew I wanted to incorporate some vibrant veg. I also knew that I wanted a fajita mix that was flavorful, but also versatile so you could add whatever additional toppings you'd like. I'm so happy with how this one came out and you'll definitely want to try this one out in your Tex Mex loving house!
Ingredients
These vegan fajitas mostly consist of jackfruit, vegetables, and lots of seasonings. And then you can top them with whatever your heart desires! Let's get into it.
- Canned jackfruit: the star of our show! This pulls apart beautifully to give us a fun texture.
- Red onion & bell pepper: these veggies give us bright colors and fresh flavor!
- Garlic, seasonings, & liquid smoke: to really elevate the Tex Mex flavors! The liquid smoke also adds some fun smoky vibes.
- Lime juice: for a little bit of acidity, and to brighten up our meal.
- Pure maple syrup: for just a tad bit of sweetness! This contrasts well with the lime juice and liquid smoke.
How to Make Easy Veggie Fajitas With Jackfruit
You can of course find the full recipe down below. But let's go over the basics.
- Pull apart your jackfruit pieces.
- Sauté your jackfruit on the stovetop.
- Add your garlic and seasonings to the pan, then continue to sauté
- Add in your onions and peppers, liquid smoke, lime juice, and maple syrup. Continue to sauté until veggies are cooked to your liking.
- Remove from heat, add to tortillas, and lastly top with toppings of your choice!
Tips & Tricks
I always love giving you guys ideas on how you can make my recipes your own. Here are some fun ideas for you to try with these Easy Veggie Fajitas!
- If you like things spicy, then feel free to add in extra chili powder! You could also add a spicy salsa to your assembled fajita for an extra kick.
- This recipe is mostly intended to be served with tortillas fajita-style, but you could also use this jackfruit mixture on top of buddha bowls or nachos!
- Get creative with your toppings! I highly recommend including at least one fun sauce with your fajitas. I love topping my fajita with Roasted Poblano Sauce, cilantro, and cherry tomatoes!

minutesThese Easy Veggie Fajitas With Jackfruit are the perfect Tex Mex inspired recipe for your plant based kitchen! These vegan fajitas pack in lots of nutritious veggies, tons of flavor, and can be dressed up any way you like.
*Note that From Start to Finish is an estimate that includes 10 minutes to prep your ingredients and 25 minutes to complete the recipe directions. If you plan on also making homemade toppings (such as salsa, guac, or the Roasted Poblano Sauce), you will have to factor in the time it takes to make those.
Ingredients
1 can of jackfruit (20 oz), drained and rinsed
4 cloves garlic
2 tsp chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
½ teaspoon dried oregano
½ teaspoon salt
1 small/medium red onion, sliced into strips
½ red bell pepper, sliced into strips
½ yellow bell pepper, sliced into strips
1 Tbsp lime juice
½ teaspoon liquid smoke
1.5 teaspoon pure maple syrup
- To assemble:
8 tortillas
Optional toppings: Joyful Balance Roasted Poblano Sauce, halved cherry tomatoes, diced avocado, cilantro, vegan shredded cheese, vegan sour cream or plain coconut yogurt, salsa, guacamole...
Directions
- Prep your jackfruit pieces by lightly pulling them apart with your fingers so that they look a bit like shredded chicken. A few large chunks are fine, you will be able to break them apart more later if needed. Set aside.
- Bring a nonstick pan or skillet to medium-high heat on the stovetop. Add in your "shredded" jackfruit and sauté until slightly darkened, usually about 8-10 minutes. Add splashes of water as needed to prevent sticking. As they heat you can also use a wooden spoon to break up the chunks more if needed.
- Add in a splash or two of water, then add the garlic, chili powder, cumin, smoked paprika, dried oregano, and salt. Give everything a mix and cook for another 2 minutes. (Add a bit more water if needed to prevent sticking).
- Add your onion and peppers, lime juice, liquid smoke, and maple syrup. Sauté another 3-5 minutes, or until the veggies are cooked to your liking.
- Remove from heat, add a few spoonfuls of the jackfruit mixture to each tortilla, and add the toppings of your choice!
