This Vegan French Toast is made with silken tofu, is eggless & has an oil-free option, and is perfect for a weekend brunch. Perfectly sweet with slightly crispy edges, your next indulgent (but also somewhat wholesome) breakfast is right around the corner!*Note that From Start to Finish is an estimate that may vary depending on if you are able to cook multiple slices in your pan at the same time or not. The overall time may be longer if you have to cook 1 piece at a time. *Note that to keep this recipe oil-free you should leave out the optional vegan butter and use oil-free bread.
Slightly toast your bread: Preheat oven to 300F. Place your bread slices on a baking tray and bake for 9 minutes, flipping them halfway through. We want the slices slightly dry but not brown. (Note that if your bread is already dry, you can skip this step). You can work on step 2 while your bread is toasting.
Make the batter: In a high-powered blender, combine the nondairy milk, silken tofu, cinnamon, nutmeg, maple syrup, vanilla extract, kala namak black salt, and regular salt. Blend until smooth. Add the arrowroot powder and blend once more until fully incorporated. Pour your batter into a shallow dish.
Cook the french toast:-Heat a large skillet over medium-low heat. If using the optional vegan butter, add 1 tablespoon of vegan butter to the pan and let it melt.-Dip one slice of bread into the batter, ensuring it's fully coated, and swirl around in the batter for 10 seconds. Flip the bread to the other side and swirl for another 10 seconds. -Transfer the battered slice to the preheated pan. Let it cook without moving it around the pan for for 1-2 minutes, then flip and cook for another 1-2 minutes on the other side. (For a softer French toast, avoid pressing the toast down with a spatula. For a slightly firmer texture, press down gently with a spatula as it cooks). Both sides should be golden brown when done.-Transfer cooked French toast slices to a wire rack to help keep them crisp. Repeat this cooking process with the remaining slices. (If your pan is large enough you can do 2 slices at a time). If using vegan butter, continue adding 1 tablespoon of vegan butter in between slices as needed to ensure that there is always some vegan butter in the pan.
Serve with toppings of your choice - such as maple syrup, powdered sugar, or fresh fruit!
Notes
*Thick vegan bread: you can use any type/brand you like, but note that heartier breads may need to soak in the batter longer. Be sure to check ingredients to find a vegan bread if that is important to you!
