Ingredients

Teriyaki Sauce

This recipe uses a homemade, non-traditional teriyaki-style glaze, designed for quick, weeknight stir fries.

  • Ginger, garlic, tamari, maple syrup, and rice vinegar: form the base of this homemade teriyaki sauce, creating a balance of savory, sweet, and tangy flavor.
  • Arrowroot powder: thickens the sauce as it simmers, helping it coat the vegetables and tofu.

Stir Fry

  • Carrots, onion, broccoli, snap peas, and bell pepper: The vegetable base of this stir fry. These add color, texture, and fresh bites that pair well with the sauce.
  • Cashews: add crunch and a subtle nutty flavor.
  • Crispy Baked Tofu: adds protein and makes our meal more filling and satisfying.
  • Green onion and toasted sesame seeds: added at the end for freshness, flavor, and garnish.

How to Make Teriyaki Stir Fry

This recipe starts with crispy baked tofu, then comes together quickly with a simple teriyaki vegetable stir fry and sauce.

Quick Crispy Tofu Method

  1. Press tofu to remove excess moisture, then cut into cubes.
  2. Toss tofu cubes with tamari, lemon juice, and seasonings. Then toss with nutritional yeast and cornstarch.
  3. Transfer to a baking sheet and bake at 425F for 25 minutes, flipping partway through, until golden and crispy.
  4. Set aside and add to the stir fry at the end. For full details, see my Crispy Baked Tofu recipe.

Stir Fry Method

  1. Add all Teriyaki Sauce ingredients to a blender and blend until smooth.
  2. Sauté carrot and onion on the stovetop. Add broccoli, snap peas, and bell pepper and sauté until lightly tender.
  3. Pour in the blended Teriyaki Sauce and toss to coat the vegetables.
  4. Bring to a gentle boil, then reduce the heat and simmer until the sauce thickens.
  5. Stir in crispy tofu, green onion, and cashews.
  6. Serve over rice or noodles, and top with toasted sesame seeds.

Tips for Teriyaki Veggie Stir Fry

  • Make the crispy tofu ahead of time. The stir fry and sauce come together quickly in under 30 minutes, so the tofu should be ready before you start cooking. This prevents the sauce from over-thickening while you wait and keeps everything evenly heated.
  • Control the spice level. For some extra spice, stir sriracha directly into the teriyaki sauce or drizzle it over the finished dish.
  • Customize the vegetables. This recipe works well with mushrooms, corn, or cauliflower in place of or in addition to the listed vegetables. Just adjust cooking times so everything cooks evenly.
  • Serve immediately as a stir fry bowl over rice or noodles for an easy weeknight dinner while the sauce is glossy and the vegetables are still crisp.

Frequently Asked Questions

How do I make tofu crispy?

This recipe uses a Crispy Baked Tofu, made by coating pressed tofu in cornstarch and baking until golden. The cornstarch helps remove moisture and creates a crispy exterior that holds up well in the stir fry.

What vegetables work best?

Carrots, snap peas, broccoli, onion, and bell pepper work best for this stir fry. Mushrooms, zucchini, cauliflower, corn, or green beans can also be used, just adjust cooking times so everything cooks evenly.

Can I use store-bought teriyaki sauce?

This recipe was created specifically for a homemade teriyaki-style sauce that is thickened and simmered to create a rich, glossy coating for the tofu and vegetables. For the best flavor and texture, the homemade sauce is recommended.
