Inspiration for Teriyaki Tofu Stir Fry
When I first went plant based I had so much fun playing in the kitchen and learning all the different ways to cook my veggies and keep things interesting. One of my favorite discoveries was how easy it is to make a delicious homemade stir fry! Just pair together a delicious sauce, your veggies of choice, and a fun protein - and you've got a flavorful and nutrition-packed meal!
By far my favorite go-to stir fry combination has always been homemade teriyaki sauce, lots of veggies, and crispy tofu. So that's what I've got for you today!
My teriyaki sauce is completely oil-free and uses pure maple syrup as the sweetener to keep things as wholesome as possible. For that reason, it's not the most authentic teriyaki sauce out there - but it still embodies the basic idea of teriyaki sauce with a Joyful Balance twist! We are pairing that with my personal favorite stir fry veggies and a Crispy Baked Tofu, all of which soak up the sauce flavor beautifully.
Ingredients
The main components of today's recipe are the homemade teriyaki sauce and the stir fry itself. As always, the full recipe is at the bottom of this post, but let's go over some of our stars today.
- Ginger, garlic, tamari, maple syrup, and rice vinegar: these provide the flavor of our homemade teriyaki sauce. A great mixture of sweet, savory, and tangy.
- Arrowroot powder: this allows our sauce to thicken.
- Carrots, onion, broccoli, snap peas, and bell pepper: our stir fry veggies! These provide a variety of textures and flavors. The broccoli is especially nice because it soaks up the sauce beautifully!
- Cashews: these add just a little extra crunch!
- Crispy Baked Tofu: adds protein, makes our meal more filling, and is simply delicious!
- Green onion and toasted sesame seeds: to toss on top of your stir fry! These look pretty and add a little bit of extra flavor.
How to Make
I tried to keep this one nice and simple. The full recipe is of course further down below, but here are the basics of what we are doing today.
- Add all Teriyaki Sauce ingredients to a blender and blend until smooth.
- Sauté your carrot and onion on the stovetop.
- Add your broccoli, snap peas, and bell pepper. Sauté a bit more.
- Pour your Teriyaki Sauce over the veggies and toss to coat.
- Let it all come to a boil, then lower the heat and let thicken.
- Toss in your tofu, green onion, and cashews.
- Serve with rice or noodles, then top with toasted sesame seeds. Enjoy!
Tips & Tricks
This is one of my go-to dinners, but even I like to switch it up a bit from time to time! Here are some ideas on how to alter this one a bit to make it your own.
- If you like things spicy, you can incorporate sriracha into this recipe! You can either add sriracha directly to the blender when making the sauce, or simply drizzle it onto your plate before digging in.
- Feel free to switch up the veggies! I've also used mushroom, corn, and even cauliflower.

The Ultimate Teriyaki Tofu Stir Fry
Ingredients
Teriyaki Sauce
- 1.5 tablespoon arrowroot
- 1 tablespoon ginger
- 3 cloves garlic -
- ½ cup vegetable broth
- ⅓ cup tamari
- ¼ cup pure maple syrup
- 1 tablespoon rice vinegar
Stir Fry
- 2 small/medium carrots - sliced into rounds
- ½ yellow onion - cut into strips
- 1 head of broccoli - roughly chopped
- 1 cup snap peas - tough ends removed if desired
- 1 red bell pepper - cut into strips
- ½ cup raw cashews
- 1 recipe Joyful Balance Crispy Baked Tofu
- 2 stalks green onion - sliced
For Serving:
- rice or noodles of choice
- 1 tablespoon toasted sesame seeds
Instructions
- Add all Teriyaki Sauce ingredients to a high powered blender. Blend until smooth.
- Bring a medium/large nonstick pan to medium-high heat on the stovetop. Add a splash of water to prevent sticking, and add your carrot and onion. Allow to sauté for 2 minutes.
- Add broccoli, snap peas, and bell pepper to the pan. Cook another 2-3 minutes (until broccoli is bright green).
- Pour your blended Teriyaki Sauce into the pan with the veggies. Toss to coat.
- Let the sauce come to slow boil, then lower the heat to medium-low and allow to cook until thickened to your liking (5 minutes is usually perfect for me).
- Toss in your Crispy Baked Tofu, green onion, and cashews. Stir to combine.
- Remove from heat and serve with rice or noodles of your choice. Top with toasted sesame seeds and enjoy!
