Key Ingredients

  • Firm tofu & seasonings: a flavorful, protein-packed substitute for traditional chicken. The tofu is baked to perfection and makes our wrap extra satisfying!
  • Cornstarch: helps create a crispy coating on the baked tofu “chicken.”
  • Romaine, parmesan, and Vegan Caesar Dressing: the components of our caesar salad. This all gets tossed together and then wrapped up in a tortilla.
  • Crispy Air Fryer Chickpeas: for a little extra crunch!

Recipe Tips

  • For the crispiest chickpeas, make them fresh right before assembling your wrap. If you're prepping ahead, they won't stay as crisp, but they'll still be tasty! You can also re-crisp them in the air fryer for a few minutes before assembly if desired.
  • I highly suggest using burrito-sized tortillas for these vegan wraps! Tortillas any smaller than this are much trickier to wrap nicely. Feel free to use regular tortillas or spinach tortillas!

Serving Suggestions

  • This recipe is perfect for meal prep and grab-and-go lunch! Prep the components over the weekend, assemble your wrap in the morning, and bring it with you to work! I suggest wrapping the finished product in foil to make transport a bit easier, and of course store it in a fridge once you get to work.
  • Pair this wrap with a simple side like fruit or chips to make your meal even more filling.
  • Cut these into halves or even pinwheels to display on a party platter! These would be a great option at summer parties or potlucks.

Substitutions & Variations

  • Short on time? You can make this recipe in less time by using store bought vegan caesar dressing and either skipping the chickpeas or replacing them with store bought croutons! Or you could even use a store bought vegan chicken instead of the Baked Tofu "Chicken".
  • One time I prepped most of these components but didn’t have everything I needed for the Caesar dressing, so I swapped in a vegan ranch instead. It of course had a different flavor profile, but it was still delicious! A fun option if you’re in the mood for a little flavor twist.

*Note that The From Start to Finish time is an estimate that includes prepping all ingredients (like pressing tofu, making the Vegan Caesar Dressing, and cooking the Crispy Air Fried Chickpeas), as well as completing the recipe directions. See notes below the recipe on how I recommend making the best use of your time! You can also shorten this time by using store bought substitutes for the dressing or the vegan "chicken".

Ingredients

Baked Tofu "Chicken"

  • 1 block firm tofu - pressed for 20 minutes and cut into thick strips
  • 1 tablespoon tahini
  • 1.5 tablespoon tamari
  • 3 teaspoon lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • 1 tablespoon nutritional yeast
  • 1 tablespoon cornstarch

Caesar Wrap

  • 4 burrito-sized tortillas - (regular or spinach tortillas will work!)
  • 4-6 cups romaine lettuce - chopped (roughly 1 head)
  • optional: ½ cup vegan parmesan
  • 1 cup Joyful Balance Vegan Caesar Dressing - (or a store bought vegan caesar dressing of choice)
  • 1 recipe Joyful Balance Crispy Air Fryer Chickpeas - (or storebought vegan croutons)

Instructions

Baked Tofu "Chicken"

  • Preheat oven to 425F.
  • In a small bowl, whisk together tamari, lemon juice, garlic powder, paprika, onion powder and tahini.
  • In a large bowl, very gently toss tofu strips in the tamari mixture until all strips are coated.
  • In a separate small bowl, combine nutritional yeast and cornstarch.
  • Sprinkle about half of the cornstarch mixture over the tofu and gently toss to coat. Repeat once more with the rest of the mixture.
  • Line a baking tray with a silicone baking sheet or aluminum foil. Place the coated tofu strips on the prepared tray and bake for 15 minutes. Remove from oven and flip each tofu strip, then bake for another 12 minutes.

Assemble your Vegan Chicken Caesar Wrap

  • Toss together the romaine lettuce, vegan parmesan (if using), and half of the Vegan Caesar Dressing.
Optional: warm tortillas in the microwave for 15-30 seconds. (This makes the tortillas a bit more pliable and less likely to crack when rolled into a wrap).
  • Lay out each tortilla for assembly. On each tortilla, add a scoop of the Caesar salad, a spoonful of extra dressing, a few strips of baked tofu, and a handful of crispy chickpeas. Fold the sides of the tortilla inward toward the center, then fold the edge closest to you up over the filling and roll tightly to form a wrap.

Notes

*To use your time most efficiently, I recommend:
1) Press your tofu, soak your cashews (for the dressing), and preheat your oven (step 1) at the same time. Then complete steps 2-5 of the Baked Tofu "Chicken".
2) While the tofu bakes (step 6), make the Crispy Air Fried Chickpeas and finish the Vegan Caesar Dressing.
3) Once the tofu, chickpeas, and dressing are all ready, assemble your wraps.
