A new year is coming, and with that comes a lot of goals for what people want to do differently in the new year. New Years Resolutions often revolve around food, and this is nothing new! However, Veganuary specifically is a trend that has risen in popularity this past decade. Veganuary is a challenge that was created in the UK and encourages people to go vegan for the month of January. Some participants use it as a starting point to then go vegan long-term, and some just do it for those 31 days. No matter what boat you land in, I'm all for encouraging people to eat more plants in any capacity!
Whether you're going fully vegan this year, or just want to sprinkle in a few extra plant based recipes into your rotation this January, let's go over some recipes you should try out this Veganuary!
