Inspiration for Strawberry Lemonade Smoothie
I love a good vegan smoothie. They're a great way to work some nutrition into your day, and they're so easy to make! My last smoothie recipe (my Caramel Apple Smoothie) had very strong autumn-vibes, so this time I decided to go for the opposite and pull in some summer flavors.
I wanted this recipe to have a refreshing lemony twist on the typical strawberry smoothie we all know and love, so we accomplish this with some simple lemon juice and lemon zest! We also get it super creamy with just a bit of frozen banana, and we are throwing in some chia seeds for extra nutrition. I love this as a little pick-me-up in the afternoon, and I just know that you will love it too!
Ingredients
This one is pretty straight forward, and packs in some great nutrition! Let's talk about the stars of the show today.
- Frozen strawberries: a good strawberry smoothie obviously needs some frozen strawberries! These pack in some great flavor and nutrients.
- Lemon juice and lemon zest: to give us that lemonade twist! The zest really makes this pop.
- Banana and nondairy milk: these are staples for vegan smoothies! These will make our smoothie nice and creamy. We only use half of a banana, so we get the creaminess from it but our main flavors will still be the strawberry and lemon!
- Chia seeds: for a bit of fiber and other great nutrients!
- Maple syrup: for just a touch of sweetness. This balances nicely with the sour flavor from the lemon!

- Smoothies like this make great midday snacks, as well as a bright and refreshing breakfast! Consider making this first thing in the morning to wake you up and get you ready for your day, or in the afternoon to get you out of that midday slump!
- Adjust these flavors however you wish! If you want a more mild lemon flavor, you can leave out the lemon zest. If you want this to be a mixed berry lemonade, then add in other frozen berries!
- You can also adjust the consistency as you wish. More nondairy milk will thin it out, and less will thicken it. This would also be an excellent smoothie bowl if you wanted to decrease the milk and thicken it up!
- Have fun adding extra little toppings to make it pretty! A strawberry on the rim of your glass or even some lemon zest sprinkled on top makes this even prettier.

Ingredients
1.5 cup frozen strawberries
Lemon juice and zest from 1 small lemon
½ frozen banana
¾ cup nondairy milk
1 teaspoon chia seeds
3 teaspoon pure maple syrup
Directions
- Add all ingredients to a high powered blender. Blend until smooth. If a thinner consistency is desired, you may add more nondairy milk as needed.
- Pour and enjoy!
